小扁豆素菜汤
¼ cup extra virgin olive oil
1 medium onion chopped
2 carrots chopped
4 garlic cloves, pressed or minced
2 ts ground cumin
1 ts curry powder
½ ts dried thyme
1 ts red pepper
6 medium tomatoes, diced
1 c lentils
6 c vegetable broth/chicken broth
1 c cabbage sliced
6 white mushroom sliced
1 teaspoon salt, more to taste
Freshly ground black pepper, to taste
1 to 2 tablespoons lemon juice (½ to 1 medium lemon), to taste

小扁豆素菜汤的做法
烧热炖锅,倒橄榄油,放入洋葱炒软,倒入除盐和黑胡椒粉外的所有干香料炒香,加入胡萝卜番茄和扁豆,以及汤汁,撒盐。
Warm the olive oil in a large Dutch oven or pot over medium heat.
add the chopped onion and carrot, until the onion has softened and is turning translucent.
Add the garlic, cumin, curry powder ,thyme and pepper flake, pour in tomato, carrots. lentil and broth. with salt and lot black pepper.小火炖20分钟,放入白菜和圆蘑菇,再炖10分钟,或是小扁豆过芯,但不软烂,倒入柠檬汁。
cover the pot and simmer for 20 minutes, add cabbage and mushrooms, cook until the lentils are tender but still hold their in lemon juice.
