2 or 3 very ripe bananas
½ cup (112 g) grass-fed butter, melted
4 eggs
½ cup (56 g) almond flour
½ cup (56 g) coconut flour
1/3 cup (64 g) coconut palm sugar
¼ cup (25 g) walnuts, finely chopped
¾ teaspoon baking soda
¾ teaspoon cinnamon
½ teaspoon vanilla extract
Pinch of sea salt
Preheat the oven to 350°F (180°C, or gas mark 4). Line a 12-cup muffin pan with silicone or paper muffin liners, or grease the cups.
In a mixing bowl, mash the bananas well with a fork. You should have about 1 cup (225 g). Add the butter and then stir in the eggs, almond flour, coconut flour, coconut palm sugar, walnuts, baking soda, cinnamon, vanilla, and salt. Stir until you have a nice smooth consistency. Pour the batter into the prepared muffin
cups about two-thirds full. Bake for 20 minutes, or until a tooth-pick inserted in the center of a muffin comes out clean.
