Margarita Pie

unsalted butter | 6 tbsp. |
crackers | 20 |
kosher salt | ½ tsp. |
chilled heavy cream | ¾ cup |
sweetened condensed milk | |
lime | 1 |
rum | 1 tbsp. |
Margarita Pie的做法
Crumble the crackers.
Heat the butter in a medium pan. Add the crackers and mix well.
Transfer the mixture to a shallow 8" pie pan. Using a measuring cup, press firmly into bottom and up sides of dish. Freeze 20 minutes.
whisk ¾ cup heavy cream in a medium bowl until cream begins to thicken to the point you see ripples and stiff peaks begin to form.
Zest the lime in a bowl.
Add kosher salt. Add rum. Taste. Add more if wanted.
Squeeze the lime. Add condensed milk and lime juice to the cream mixture. (Taste often, and you'll know how you like it best.) Mix well
Remove pie pan from freezer and pour in filling. Using the back of a spoon, gently spread filling to edge of crust.
Dust lime zest over.
Freeze pie overnight.
