Deruni
a traditional ukrainian dish = deruni = potato pancakes
用料
potatoes | 2 large |
onion | 1 medium |
carrots, peeled | 2 medium |
eggs | 2 |
garlic cloves | 3 |
all-purpose flour | 1/3 cup |
baking soda | ½ tsp |
salt | 1 ½ tsp |
oil (used garlic oil, but any vegetable or olive oil will work fine) | 2-4 tablespoons |
sour cream | for serving |
Deruni的做法
grate potatoes, onion, and carrots using fine holes on box-grater or use kitchen aid with food grinder attachment
add eggs, flour, baking soda, and salt; mix well.
add enough oil to pan to ensure entire bottom on pan is in oil; heat oil. add generous spoonful of deruni mixture (approximately 3 tablespoons). cook for approximately 3 minutes per side, until golden brown and cooked through.
serve with a generous helping of sour cream!

1. aid with food grinder attachment save time
2. depending on the moisture from the pototoes and onion, you may need to add more flour, since the consistency of the deruni mixture should be thick, not runny.
