Very strong Bread Flour | 450g |
Wholemeal Flour | 50g |
Water | 375g |
Salt | 10g |
Active Starter | 100g |
Onion | 1 |
Cheese | 30g |
Tartine Country Loaf with caramelised onion and cheese的做法
Mix flour, water, salt in the evening. Put in the fridge then take out to warm on the bench before bedtime.
In the morning, mix in starter. Start folding, bulk fermentation on bench then fridge.
Make caramelised onion by cooking onions in butter with salt and sugar, low heat.
Take the dough out of fridge, fold in caramelised onion and cheese. Pre shape, bench rest, shape and proof in basket.
Bake: preheat oven gas mark #9, bread in at #8 for 20 min then lid off for another 20 min. Cool for 1 hour. Done.
